Oatmeal Chocolate Chip Cookie Mix
Every week, like clockwork, my mom would concoct a batch of oatmeal chocolate chip cookies that were meant to last for week's worth of lunchbox treats, after school snacks, and occasional after dinner sweets. She rarely baked from scratch, so this was special in and of itself. The cookies were divine, too good perhaps. Much to my mom's dismay, the cookies rarely lasted more than one day as they were poached early and often by myself and other family members. This recipe is an homage to our moms. These cookies are chewy, full of oats and filled with just enough chocolate for that special zing.
INGREDIENTS: Oats, Brown Sugar, Sugar, Unbleached Enriched Flours (Wheat Flour, Malted Barley Flour, Niacin, Iron, Thiamin Mononitrate, Riboflavin, Folic Acid), Semi-Sweet Chocolate Chips (Sugar, Chocolate Liquor, Cocoa Butter, Soy Lecithin, Vanilla Extract), Canola Oil (Ascorbic Acid and Rosemary added to preserve freshness), Natural Vanilla Flavor, Baking Soda, Sea Salt.
